Crisp Apple Salad with Honey Dijon Vinaigrette
This salad is meant to refresh your palate before a big, rich bowl of pasta. You’ll get crispy/crunchy flavors from the apples and veg, sweet/tart from the lemony vinaigrette, and a touch of salty/savory from the cheese.

Ingredients
1 small apple
1-2 radishes
3 stalks celery or 1/2 fennel bulb
1 cup arugula microgreens
2 cups parsley and celery leaves
Pecorino romano cheese or another hard salty cheese
1 lemon
⅓ cup olive oil
1 tsp dijon mustard
1 tsp honey
salt and pepper to taste
Let’s Make It!
Thinly slice the apple, radishes, and celery/fennel. Add to a salad bowl alongside greens and parsley leaves. To make your dressing, combine the juice of the lemon, dijon mustard, honey, olive oil, salt and pepper. Taste and adjust proportions as needed. Add to salad and toss. Top with large shavings of cheese, fresh cracked pepper, and a drizzle of olive oil.
